You don't always see them.
Those people in the back of the house, cooking your food, working when you are having fun. If you have never worked in a kitchen, you won't really understand. Some people work in a restaurant as their first job, as a temporary thing. The truly great chefs though, the ones that stay in this career even through the terrible working conditions, dealing with intense stress and pressure... it's a rollercoaster. It is also in our blood, we are made for the kitchen, the rush, the creativity... the team.
Ever wondered what makes a chef truly awesome? It's not just about cooking skills—it's a whole package of traits that turn a good chef into a great one. Let's look at the important qualities that every chef should have to rock the culinary world!

1. Passionate Foodie:
The best chefs are the ones who are head over heels in love with food. Their passion for flavors, ingredients, and all things delicious is what drives their culinary adventures. You can taste the love in every bite they create!
Following a recipe is not our strong suit, we like to substitute ingredients, try different flavors. Sure we can standardize recipes so you can enjoy the same thing time and time again, but we really love to create.

2. Creative Genius:
Chefs with a spark of creativity are like magicians in the kitchen. They're not afraid to mix and match flavors, try new techniques, and surprise your taste buds with innovative dishes that look as good as they taste.
There are times where I will be walking down the road and get a whiff of something and my brain starts thinking up new creations!

Detail-Oriented Wizards:
Precision is key when cooking, and top-notch chefs pay attention to every little detail. From measuring ingredients to perfecting plating, they make sure every dish is a masterpiece.
Consistency is key, writing lists, prepping so your cook goes off without too many curve balls. If you are not prepared, you will have difficulty in staying organized and succeeding.

4. Masters of Time and Organization:
Juggling multiple tasks in a busy kitchen requires serious time management skills. Great chefs keep their cool, stay organized, and ensure everything runs smoothly from prep to plate.
Timing, that is one thing I take very serous, my stress level goes through the roof if I am going to be late for anything. Not always an easy thing to accomplish when you have 3 kids. Whenever my kids ask how long until we leave or get some where it is very rare that I say a estimate. "we will be there in 7 min, you have 3 minutes until we leave the house"

5. Cool Under Pressure:
When the kitchen heats up, cool heads prevail. A fantastic chef stays calm, handles stress like a pro, and keeps the culinary show running without missing a beat.
I still remember being 7+ months pregnant with my first child and the lunch rush was starting to go sideways. I had to jump onto one of the stations to bail one of the cooks outs as he was slammed. The owners just looked at each other and said, "should she be back there?" ... "Do you want to go back and tell her that?" ... "Nope!". We do what we need to do to get the job done.

6. Always Learning and Adapting:
The culinary world is always changing, and chefs who stay ahead of the game are constantly learning and adapting. They love trying new techniques, exploring fresh ingredients, and keeping their menus exciting and relevant.
As Chefs, we sometimes need to adapt to a new situation that is better for us. It can be hard for us to think of life outside of a restaurant. It was true after I had my kids, I knew I couldn't go back to a restaurant, I wanted to see my kids grow up and that's hard to do as a Chef in a restaurant. That's why I started My Take Home Chef, I could still be a Chef, but I could also still be there for my family.

7. Communication Kings/Queens:
Teamwork makes the dream work in the kitchen, and great chefs are excellent communicators. They lead their team with clear instructions, provide feedback, and create a positive and collaborative environment.
When you have a great team, they are your family! My days cooking in Vancouver with that team are still some of my favorite memories. Even if it was a rough busy service, we could get through together. We worked hard, played hard, and years down the road ... all stayed in the industry, but all took a slightly different culinary path. We were a group of overachievers, we were family!
8. Resilient and Persistent:
Bumps in the culinary road are inevitable, but awesome chefs bounce back stronger. They learn from failures, keep pushing forward, and never lose sight of their culinary dreams.
As I said, it is not an easy profession and lord knows I've talked a few people out of becoming a Chef. We have bad days, we hide in the cooler and scream out of frustration. At the end of service we collapse or hide around a corner and take 30 seconds to get some food in us.
We come back though to do it all again.

These traits turn a simple meal into a culinary masterpiece and keep us coming back for more delicious adventures in food!
Next time you are at a restaurant, look around, notice the amount of people that are enjoying their meals. There are probably only a handful of Chefs / Cooks in the back doing all of that.
